De-Stress with Healthy Gingerbread Cookies

The holiday season can be a stressful time for many of us. Between work deadlines and family obligations, it's easy to feel overwhelmed. Luckily, National Gingerbread Cookie Day is approaching on November 21st, and what better way to celebrate than with a comforting, healthy cookie recipe? These gingerbread cookies are not only delicious, but they're also made with wholesome ingredients that will help you feel your best. So, let's get baking!

This recipe is packed with everything you need for a satisfying treat. The trick is in using unsulphured molasses, which is a rich source of iron and other minerals. Plus, swapping in unsweetened applesauce for some of the sugar helps cut down on calories while still adding flavor. To make it even better for you, we're using whole wheat flour for extra fiber.

Once you have your ingredients ready, the first step is to combine the dry ingredients in a large bowl. This will ensure that everything gets evenly distributed throughout the dough. Next, mix together the wet ingredients in a small mixing bowl. The mixture will be thick, but that's okay – it will come together once you start stirring it into the dry ingredients.

At this point, you'll want to divide the dough in half and form each half into a disk. Cover and refrigerate for at least an hour, or up to overnight if you want to make it ahead of time. Then, roll out the chilled dough on floured parchment paper and cut it into festive shapes using a cookie cutter. Bake for 12-14 minutes or until golden brown.

To add a bit of zing, whip up a simple lemon icing by whisking together powdered sugar and lemon juice. This adds a tangy note to the sweetness of the cookie and balances it out nicely.

National Gingerbread Cookie Day can be a fun way to take a break from your busy schedule and indulge in a sweet treat. With this healthy gingerbread cookie recipe, you can enjoy the flavors you love without sacrificing your health. Not only are these cookies nutritious, but they're also easy to make and perfect for sharing with friends and family. Give them a try and let us know what you think!
